Dine værter

Mikkel Friis-Holm er en dansk chokoladeproducent og grundlægger af Friis-Holm Chokolade. Han er kendt for sin bean-to-bar tilgang, hvor han arbejder tæt med kakaobønder – især i Nicaragua – og fokuserer på kvalitet, bæredygtighed og rene smagsprofiler. Hans chokolade har vundet flere internationale priser 

Suhrs Højskole i København er en gastronomisk højskole med fokus på mad, sundhed og bæredygtighed. Skolen tilbyder korte og længere forløb inden for madlavning, ernæring og fødevareforståelse og er kendt for sin praksisnære undervisning og stærke faglige tilgang til gastronomi og madkultur.

Eventet er en del af den landsdækkende gastronomiske fejring i 2026 i forbindelse med MICHELIN Guide Ceremony Nordic Countries, der afholdes i Tivoli 1. juni. Året byder på madoplevelser i hele landet og sætter fokus på bredden, kvaliteten og mangfoldigheden i dansk gastronomi. Glæd dig til intime middage, stjernespækkede pop-ups og større publikumsevents som Tivoli Food Festival.

Learn about Mikkel Friis-Holm’s journey from chef to becoming one of the world’s most awarded chocolate makers, and gain insight into — and the key to understanding — differences in quality and integrity.


Your hosts


Mikkel Friis-Holm is a Danish chocolate producer and founder of Friis-Holm Chocolate. He is known for his bean-to-bar approach, working closely with cacao farmers — particularly in Nicaragua — and focusing on quality, sustainability, and pure flavour profiles. His chocolate has received multiple international awards.


Suhrs Højskole in Copenhagen is a gastronomic folk high school focused on food, health, and sustainability. The school offers both short and long courses in cooking, nutrition, and food knowledge, and is known for its hands-on teaching and strong professional approach to gastronomy and food culture.


Part of a gastronomic year


This event is part of the nationwide gastronomic celebration in 2026 in connection with the MICHELIN Guide Ceremony Nordic Countries, which will take place at Tivoli on 1 June. The year offers culinary experiences across the country and highlights the breadth, quality, and diversity of Danish gastronomy. Look forward to intimate dinners, star-studded pop-ups, and larger public events such as Tivoli Food Festival.


The MICHELIN Guide Ceremony Nordic Countries will be held in Denmark in 2025 and 2026.
